RECIPE OF THE MONTH
FRESH MINT SAUCE
An ideal accompaniment to any of our lamb dishes. It's made
in seconds!
Vinaigrette
Mix together two tablespoons of olive oil, with 1 teaspoon of
white wine vinegar and 1 tsp of caster
sugar in a mixing bowl. Add salt and
pepper to taste.
Finely chop a large bunch of fresh mint (about 10 20cm pieces).
Mix mint into the vinaigrette mixture.
Taste. You might need to add a little
extra oil to make an ideal consistency.
It should not be too runny or too stiff.
